I think I started watching Season 1 after it had been on a few weeks so I was able to marathon a good chunk of episodes. Once you get a bit more of the story, you'll be sucked in. It takes them awhile to find their footing for the storytelling mode and they back off on the flashbacks a little bit.
The story for Season 3 focuses on a witch's coven, if you think that would be more interesting. I like that each season is it's own story and they didn't try to drag it out.
