Oct. 20th, 2015 09:44 pmMy boss got me the slow cooker off of our wedding registry (I cannot BELIEVE how amazing an generous everyone has been, I am blown away...or maybe I'm just a cheap selfish bastard and this is normal...but I digress)
ANYWAY! New slow cooker means I need recipes! I can go on Pinterest, of course, but I would love to get some of your favorite slow cooker meals! Please post recipes or give me the link to a website with your favorite soups, meals, and desserts. But mostly meals. I love using the slow cooker for Wednesday nights when we don't get home until 9:30pm.

Date: 2015-10-21 06:13 pm (UTC)Here's the easiest chicken curry ever. It's like cheating. I don't measure anything, this is all approximate.
+ 1 package of bone-in chicken thighs
+ a jar of salsa (or a cup-ish
if you buy those giant gallon things like I do)+ 1-2 tbl. sweet curry powder (I like lots)
+ 1/2 cup-ish sour cream (optional - I skip it if I don't have any)
+ rice or couscous or noodles (couscous takes 5 min. so I use it a lot)
1. Dump the chicken in the slow cooker.
2. Mix the curry into the salsa and stir it up. pour it over the chicken
3. Cook for whatever. (I usually do low for 5-6 hours, maybe? IDK - it's so forgiving)
4. 15-ish minutes before you're ready to eat, stir in sour cream
5. Cook up the rice or whatever you're spooning this over
6. BAM! awesome chicken curry
er....sometimes I steam some broccoli or something (

Date: 2015-10-29 11:26 pm (UTC)One of my favorite easy ones is to put a few chicken breasts into the crockpot with a large (or two regular size) jars of salsa, a can of drained corn, and a can of (rinsed/drained) black beans. Let it cook for 4 hours on high or 6-8 on low. Then I'll serve some over rice and with the rest, I'll roll them into tortillas with some cheese and bake. So it's a lot of leftovers, but it feels like different meals :)
