I agree with enjoying PoA more if you've read the books, but I think you can still understand it without having picked one up. The map and the patronus' are important, as is the backstory for Sirius, Lupin, etc.. but you can understand the story without it (even though huge chunks of information have slipped by you).
GoF, imho, felt like a lot of stuff was missing and if you hadn't read the books then the movie would be sort of a mess in your mind. Now, mind you, I haven't read GoF since it first came out, but I knew that big chunks of school and classes were missing from the story, stuff that I felt could have helped the movie a bit.
I still liked it alot though, and I want to see it again! hehe.
